Salads are a simple and easy go-to for making lunches that are just that bit healthier than some crisps and a sandwich. One recipe, which went viral back in 2022 and has been doing the rounds on social media once again, was shared by model Bella Hadid. The supermodel shared a video making the salad on her TikTok page, dubbing it her "#1 salad."
She wrote: "My #1 salad to make. I botched the ending of this video because I had to finish the rest of dinner+ running late (not pictured - your favourite olive oil added at the end with the balsamic glaze (non-negotiable it's a must I swear) and then mixed together, avocado becomes part of the dressing so it's creamy and yummy."

Finding this on my feed, I knew I just had to give it a go, and although my local supermarket was out of plain rocket, I did manage to get some rocket and babyleaf salad. So while it was exactly like Bella's, it still had the same bare bones.
The salad itself was so delicious, and I will definitely start making it regularly for my lunches. However, I felt like it just needed something extra, so next time, I'll be adding some cherry tomatoes to the mix.
It also had the benefit of being super easy to make, and wasn't particularly time consuming at all, taking around 10 minutes to get all the ingredients chopped and into the bowl.
The recipe and quantities were shared by , and it's this recipe that I opted to follow.
Ingredients- One packet of rocket or other salad of choice (about 140-150g)
- Two mini cucumbers, or one medium cucumber, sliced
- One red bell pepper, sliced and chopped however you prefer
- One avocado, sliced
- ½ cup (around 40g) of crumbled or grated parmigiano reggiano or parmesan
- Salt and pepper, to taste
- A drizzle of olive oil
- A generous drizzling of balsamic glaze, or balsamic vinegar
Combine the rocket, cucumbers, bell pepper, avocado and parmesan in a large bowl.
Squeeze the juice of half a lemon over the salad and sprinkle with salt and pepper. Drizzle with some olive oil.
Follow this by pouring a generous drizzle of balsamic glaze, or vinegar if you'd prefer. In the video, Bella does it in a criss-cross pattern, ensuring all of the salad has some of the glaze.
Toss together, add more salt and pepper if desired, and serve.
